As a vegan mom, you’d think I’d have the poster children for kids who eat their veggies. I have fantasies about my idyllic family dinners where I lovingly spoon mounds of vegetables onto my kids’ plates while they beam back at me with faces of gratitude and gulp down each bite in delight. Only in my dreams!
To curb the dinner vegetable battle, I have a few strategies to get my kids to eat their veggies. I really hate being a nag, especially when it comes to food, so my major strategy is to make it fun, interactive, and give them some control over which veggies they put on their plate.
These three vegan meal ideas let family members customize their own dish with the vegetables they want, while offering lots of options to try something new.
Swap out the traditional corn tortilla and use a romaine leaf for the shell instead. For fillings, try:
Be sure to have lots of homemade guacamole and salsa on hand for topping!
Spread sushi rice over a sheet of nori. Let the kids choose what to put inside, roll it up, and slice. Some of my favorite sushi fillings are:
