In reply to Chicana. You can definitely substitute brown sugar with coconut sugar, but if you want the small flavor, also add a touch of molasses to the coconut sugar. I think half and half would work out fine. Let us know how they come out :)

No joke when I say that I’ve made this recipe at least 4 times in the past couple of months. My family LOVES them! My husband is a winter hiker and he took a few as a snack when he went hiking with a friend – and his friend almost devoured them all! On their next hike together, I made him his own batch to take home because he raved about them so much. Best part is, my husband and his friend aren’t even vegan! Highly recommended cookie recipe from this household! (BTW, the texture is so perfect.)
