Perfect portable salad!! Not only is this salad super colorful and adaptable to any tastes…it’s just so easy and fun to eat! I like using brown rice instead of quinoa and roasted chickpeas instead of kidney beans, but there are endless ways to make this salad fresh and festive. I almost don’t want to eat lunch because it looks super pretty – lol!
