I just made this the other day! It was easy too, because I cooked the lentils in my Instant Pot. It’s very hearty meal. I find plain pasta with sauce boring, but this was delicious. It stores well, so you could even make a big batch to last a few days.

Family Favorite!! You would never know this was a vegan meal unless you were truly searching through the sauce. A great choice for non-vegan guests who are expecting a home cooked, classic meal with tons of flavor. The fragrance from the sauteed vegetables is amazing…your entire house will smell wonderful! It has the perfect texture and I think thin spaghetti (or maybe penne) is a must for this recipe. I love the texture, too. Just add a sprinkle of veggie parmesan or nutritional yeast, a fresh salad and some oven toasted garlic bread on the side – amazing 😀

LOVE making this! I sometime buy those pre-cooked lentils that they sell at Trader Joe’s which makes it an extra quick and easy vegan dinner. How did it take so long for you to find your way into my life, dear vegan lentil bolognese?
