I love baked oatmeal! I just finally tried it for the first time a couple years ago and it’s such a delicious alternative to stovetop oats. This version of vegan baked oatmeal with berries is one of my faves.

So comforting, so warm, so wonderful! I never used to like oatmeal – I thought it was too slimy – but this recipe is perfect. It really has the best texture and all of the additions truly work together in the most delicious way. I’ve also tried this with ground flaxseeds and, to me, it’s even better! I’m a huge nut butter fan, so I can’t help but also add a little dollop of peanut or almond butter to the top. The walnuts were such a great suggestion. I added diced Fuji apples and golden raisins to mine, so it tasted like the most heavenly apple pie. If you don’t usually like oatmeal, I really urge you to give this a try. If I loved it, YOU will!
