Grilled Potato Skins With Guacamole

These grilled potato skins with guacamole are basically crispy barbecued finger food. Perfect as hors d’oeuvres or as a starter served with craft beer and vegetable chili. Once you try them you might become addicted!

Ingredients

For the potatoes

  • 6 medium potatoes, choose a fast-cooking variety
  • 3 tablespoons olive oil
  • 1 teaspoon salt, to taste

For the guacamole

  • 1 red chili pepper
  • 1 avocado
  • 4 teaspoons lime juice
  • ½ teaspoon salt, to taste

Extras

  • 3 tablespoons chopped coriander leaves

Instructions

  • Boil the potatoes in their jackets and leave them to cool. Halve them and scoop out the flesh, leaving 5 mm over the skin. Set aside the potato flesh.
  • For the filling, finely chop the chili. Crush the potato flesh and the avocado with a fork and mix them with the remaining guacamole ingredients.
  • Brush the potato skins with the olive oil and grill them on their cut side over high heat for 3-4 minutes. Turn them over, fill them with the potato guacamole, and finish cooking for another 3 minutes with the lid closed.
  • Top with chopped coriander and serve with lime wedges.

Budget and Garden Party-Friendly! 

This is one of the simplest recipes ever. You’ll only need potatoes, avocados, and limes as the main ingredients! So easy! Buy a big bag of young potatoes and try to find some avocados on sale. If you don’t have limes just use lemons and the spices you have on hand.

Wouldn’t these potato skins be a perfect side for some chunky veggie burgers? Or even as a starter to eat with your hands while waiting for the corn on the cob to caramelize? So delicious!

As it usually happens with simple recipes, it’s super easy to swap ingredients. In case you don’t fancy using guacamole or you simply don’t have any avocados on hand, then you could fill the potato skins with some creamy store-bought or homemade hummus, pico de gallo, or melted vegan cheese

Do You Need a Grill to Make Potato Skins? 

Not at all! You can easily make this recipe in the oven. Just boil the potatoes, halve them, and scoop the flesh out. Drizzle them with olive oil and place them in the oven tray (lined with parchment baking paper) and select the grill mode on your oven. Leave them in there for 5 minutes and flip over. Once ready, fill them with the guacamole (or hummus) and bake them for another 3 minutes. 

There you go! No need to own an outdoor grill to enjoy these yummy potato skins—and you can prepare them during rainy days too. They’ll work for any get-together as they take so little time and effort to make.

    Yum. Yum. YUM. YUMMMMM! I mean, how can you go wrong with potatoes and guacamole?? The potatoes came out like a dream and the guacamole sublime! Mixing a warm, crisp potato with a cool, soft guac is like peanut butter and jelly – the BEST combo ever. I could eat these every single night of the week! Don’t forget to use that splash of lime juice over the top of everything. It really highlights all of the flavors 😀
