You can’t beat a scrumptious stir fry to satisfy your craving for sweet and sour flavors! Our family never goes a week without whipping up this vibrant mix of vegetables with its thick, heavenly sauce and oodles and oodles of noodles. Take time to throw together this savory Asian inspired teriyaki stir fry and you won’t be sorry!
Why do we love stir fry? It may have something to do with the Buddhist-inspired “Power of Five” to reflect five different:
Senses (sight, smell, sound, taste, touch)
Tastes (sweet, sour, bitter, salt and savory umami)
Colors (green/blue, red/orange, black/brown, white, and yellow).
This tantalizing teriyaki stir fry is a perfect example of this culinary creativity.
Tempting Your Taste Buds
Radiant red bell peppers and luscious teriyaki sauce sweeten your senses while the sting and sour zing of the lemon or lime juice creates the perfect balance between the two. Zesty ginger and rousing red pepper flakes form a bitter profile for this dish, but they are harmonized beautifully with the salty component of the teriyaki sauce and the undeniable umami element of the carrots and mushrooms.
Craving Colors
Gorgeous green onions, plant-like parsley, and lovely lime bring in the brilliant green and blue. Carrots, red bell pepper, and red pepper flakes fire the flames of red and orange. Mushrooms and teriyaki sauce are bursting with elemental black and earthy browns, while splendidly small sesame seeds wear their white with delight. Graceful ginger and garlic (along with the nest of noodles) rounds out the rainbow of colors with a mellow yellow.

How to Serve it Up
Starchy Substitutions – swap out your nifty noodles for steamed white or brown rice, quirky quinoa, soft tortilla, sweet potato, or even a large lettuce leaf. This fantastic teriyaki stir fry filling tastes great with any grain or vegetable!
Don’t Like Mushrooms? No problem! To retain the umami flavor in this meal, knock out the mushrooms and bring in some sliced, tamari marinated tofu or tempeh for a similar texture and flavor.]
Veggie Power – pump up the power of veggies with additional greens, like steamed broccoli, bok choy, baby spinach, sauteed celery, or snow peas (my favorite!)
Ramp Up the Richness – a teaspoon of toasted sesame oil can spike up the flavor and richness of any Asian inspired dish. You won’t believe what a tiny taste will do to this teriyaki stir fry!
Spice it Up or Down – as always, you can add (or subtract) more ginger, garlic, crushed red pepper to your meal to make it as unique as you are!
Leave Room for Leftovers
Easily store your leftover stir fry (if you have any!) in a glass container or ceramic dish.
To reheat, you have 2 options. You can add a little water and a bit of teriyaki stir fry sauce to your container, cover, and microwave for a minute or two. Or, you can add a tablespoon of water and a soupcon of sauce to a small saucepan and stir the mixture gently until the desired temperature is reached.
You might want to cook up some extra rice, noodles or veggies (or all three!) to plump up your portion. Leftovers will be good to go for at least a few days in the refrigerator.

Teriyaki Vegetable Stir Fry

Craving vegan Japanese food? Whip up this delicious teriyaki vegetable stir fry in under 15 minutes! Serve it over rice, ramen, or add in some rice noodles at the end for a noodle teriyaki stir fry! The balance between sweet, sour, and salty is so satisfying.
1smallcarrot, peeled and cut into strips, as pictured)
⅓cupsticky teriyaki sauce
1tablespoonsesame seeds, white or black, plus additional for garnish
Fresh sliced green onion, for garnish
Parsley leaves, for garnish
Red pepper flakes, for garnish
1wedge of lime or lemon, for garnish, optional
7ouncescooked rice or cooked ramen noodles, for serving (optional)
Instructions
In a saute pan over high heat, add the oil. Once hot, add the mushrooms and saute for 2 minutes. Add the garlic and saute for another minute.
Add in the carrots and bell peppers and cook until for 3-4 minutes, until softened.
Add in the teriyaki sauce and lower the heat to medium. Let it cook, while still stirring, for another minute. Add in the sesame seeds and mix to combine.
If using ramen noodles, add in cooked noodles and saute with the veggies for a minute or two. If needed, add another splash of teriyaki sauce. Otherwise, remove from heat and serve over cooked rice. Sprinkle with sesame seeds and sliced green onion and garnish with a lime wedge and enjoy!
Notes
You can also add in other favorite veggies, such as bok choy, broccoli, or spinach! Just add more teriyaki sauce as needed.
