What Are Bagels Made From?

All bagels are made from a very simple dough composed of flour, water, yeast, and salt. What sets them apart from basic dinner rolls is that after they’ve been shaped into rings, they’re first boiled in a lightly sweetened water bath before being baked. They critical step creates the characteristically chewy crust and dense interior crumb. It works like magic but is based in pure science.

The water bath it typically sweetened with a tiny splash of malt syrup, or sometime molasses. However, in some very rare cases, artisan bakers may use honey as a non-vegan sweetener instead. This typically isn’t disclosed if you’re purchasing directly from a baker or café, so it, a good idea to double check just to make sure.  

Are All Bagels Vegan?

You’ll be delighted to hear that most bagels are vegan by default. There are a few specific varieties to watch out for that will contain animal products, though.

The following flavors should be avoided or regarded with caution:

  • Egg bagels: These are made with egg yolks or whole eggs which gives it a distinctive yellow hue.
  • Cheese bagels: Jalapeno-cheddar and Asiago bagels are just two of the most popular examples. Dairy-based cheese is typically sprinkled on top or mixed into the dough for added flavor unless it’s specifically made by a plant-based bakery.
  • Chocolate chip bagels: In kosher delis, there’s a good chance these might be vegan since it’s forbidden to mix meat and dairy, but it’s highly possible that the chocolate may contain milk anywhere else. Always ask or read the labels.

Homemade Vegan Bagels

Ready for the best homemade vegan bagels recipe? This one is simple, loved by many, and will make your house smell amazing. This vegan bagel recipe comes from longtime vegan chef Philip Gelb. Philip has been teaching plant-based cooking classes in Oakland for many years, and has even taught bagel making classes! These delicious homemade bagels are a crowd favorite every time. And they're absolutely perfect served up with some dairy-free cream cheese, plant-based butter, or a big heap of tofu scramble and melted vegan cheese!

Ingredients

  • 1 teaspoon active dry yeast
  • 4 tablespoons rice malt, divided barley malt or agave
  • 2 cups warm water 105 Degrees Fahrenheit
  • 1 teaspoon salt
  • 2 cups whole wheat flour
  • 3 cups all-purpose flour
  • 1 tablespoon olive oil
  • teaspoons baking soda
  • Dried Garlic Dried Onion, Sesame Seeds, Poppy Seeds, and/or Coarse Salt (Optional)

Instructions

  • In a large bowl, combine the yeast, 1 tablespoon of malt, and the warm water. Allow yeast to proof until the surface becomes foamy (this will take around 5 minutes). Whisk in the salt. Add the whole wheat flour and 2 cups of the all-purpose flour, stirring with a wooden spoon until incorporated.
  • Place the bagel dough on a solid sturdy surface and slowly work in the rest of the all-purpose flour. Knead for 10 minutes or until smooth and elastic. Coat the dough with olive oil, place in a bowl, and cover tightly with a clean dish towel.
  • Allow to rise until the dough has doubled in volume; approximately 1 hour, depending on temperature and altitude. Time can vary significantly based on these factors.
  • After your vegan bagel dough has doubled, knead it lightly for 1 minute. Divide the dough into 12 equal parts. Roll each piece into log and then fold it into a circle, firmly pressing the seam together. Place each bagel on a lightly floured surface, cover with a clean towel, and let rise until doubled; about 1 hour.
  • Meanwhile, preheat your oven to 500 degrees F and place a baking stone inside, if using. Otherwise, the bagels can be baked on a standard sheet pan. In a large pot, bring 3 quarts of water to a boil and add the baking soda along with the remaining 3 tablespoons of malt. The baking soda is necessary to properly texture and brown the bagels.
  • After the bagels finish their second rise, boil each bagel for 1 minute on each side, keeping the water at a consistent, rapid boil.
  • Now your bagels are ready to bake. Top them with any desired seasonings, patting them gently into the top with your hands. Transfer carefully to your baking stone or sheet pan, and bake for about 15 minutes.

Notes

The bagels are best served within 15 minutes of emerging from the oven!

Ingredients

  • 1 cup water + 3 tablespoons
  • 1 teaspoon granulated sugar plus ½ cup, divided
  • teaspoons active dry yeast
  • ¼ cup refined coconut oil plus 2 tablespoons
  • 4 cups all-purpose flour divided
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • teaspoon ground turmeric
  • 2 tablespoons agave
  • 1 tablespoon sesame seeds or poppy seeds

Instructions

  • In a small microwave-safe bowl, warm the water in the microwave for about 1 minute. (It should be warm but not hot to the touch; if you have a food thermometer, it should register 105 to 110 degrees F.) Sprinkle in 1 teaspoon of the sugar and swirl it around so it dissolves. Lightly sprinkle the yeast into the sugar water and allow the yeast to awaken for 7 minutes.
  • In another small microwave-safe bowl, heat the coconut oil in the microwave for 30 seconds or just long enough to bring it to a liquid state. Set aside.
  • In a large bowl, combine 2 cups of the flour with the remaining 1⁄2 cup of sugar, baking powder, salt, and turmeric and mix with a fork.
  • Add the yeast mixture and melted coconut oil to the dry ingredient mixture and stir until combined. Slowly add the remaining 2 cups of flour and, using your hands, knead the dough for a full 10 minutes, until all the flour is incorporated and you have a smooth dough.
  • Grease a large bowl. Place the dough ball in the bowl, cover loosely with a damp towel, place in a warm area (such as near the oven or in the sun), and allow to rise for about 1 1⁄2 hours.
  • After the time has passed, very lightly flour a flat surface and roll your risen dough into a long, thick snake 14 to 16 inches long. To make a classic three- strand braid, cut the dough into equal thirds. Starting in the center of the dough piece and using your hands to gently roll outward, roll each piece into a strand that is 12 to 14 inches long with the ends slightly tapered. Once all three dough pieces are rolled out, bring one end of each strand together and massage them firmly together to stick. Just as in a traditional braid, bring the left strand over the center one, making the left strand the new center strand. Then bring the right strand over the center strand, making that the new center strand. Repeat this pattern (left to center, right to center, and so on) until you reach the end of your strands. Press the ends together and tuck them under the end of your loaf. Go back and tuck the top of the loaf as well to produce rounded ends.
  • Line a baking sheet with parchment paper or a silicone mat. Place your loaf on the baking sheet, cover with a damp towel, and allow to rise for another 50 minutes.
  • Preheat the oven to 350 degrees F.
  • Once your loaf is looking nice and puffy, remove the cloth. Using a basting brush, lightly spread the agave evenly across the entire loaf, including the sides. Sprinkle the loaf with the sesame or poppy seeds. Bake for 35 to 40 minutes, until the top is hardened and a rich golden brown.
  • Allow to fully cool before wrapping with a challah cover or towel. Tear (or slice) and enjoy!

Notes

Storage: Challah freezes beautifully. Slice the loaf before popping it into the freezer so you can pull out a slice to toast whenever the fancy strikes.
Stand Mixer: This vegan challah recipe works beautifully in a stand mixer, which will save you both time and effort! Instead of kneading by hand for 10 minutes, you can run the stand mixer with a dough hook for 5 minutes and get the same effect.

How To Make The Dough For This Pesto Bread Recipe

Follow these simple steps to make this pesto bread. The hardest part about this recipe is waiting for the dough to rise, but trust us…it’s worth the wait!

Prepare the Dough

Step One: Place the water, sugar, and yeast into a bowl and allow it to stand for about 5 minutes until foamy. In a separate bowl, whisk the flour and salt together. Add the yeast mixture and olive oil. Mix with a wooden spoon until a shaggy dough starts to form.

Step Two: Knead the dough for about 5 minutes on a clean work surface. For this recipe, you want the dough to be a little on the stickier side.

Step Three: Oil a large bowl and place the dough inside. Turn it a few times so the dough is coated in oil. Cover it with a damp towel and leave it in a warm spot for about 1½ hours. During this time, the dough will double in size.

Step Four: Punch the dough down. This is an essential step when making dough. This releases any gas bubbles formed during rising and allows you to knead and form it. Now we’re ready to move on to the next step!

Prep the Bread

Step One: Using a rolling pin, roll the dough out into a 12 x 18–inch shape. Spread the freshly made walnut pesto over the surface of the dough.

Step Two: Roll the dough up lengthwise, forming a log shape. Cut the dough into 9 or 10 equal-sized pieces with a sharp knife or dental floss.

Step Three: Grease an 8 x 4–inch loaf pan with vegan butter. Line with parchment paper, leaving a slight overhang on two opposite sides. This will allow for easy removal once the bread is baked. Place the pieces into the loaf pan to create a zigzag pattern and cover with plastic wrap. Place in a warm spot for about 45 minutes to slightly rise again.

Step Four: To bake, preheat your oven to 350°F (180°C). Remove the plastic wrap and brush the tops all over with olive oil. Bake for 30 to 35 minutes. Cover with aluminum foil halfway through the baking time. This will prevent the tops from getting too dark. Test the readiness by inserting a toothpick to ensure the center is no longer doughy.

Step Five: Remove from the oven and let cool in the pan for at least 15 minutes. Allow it to cool completely before serving.

If you’ve ever made cinnamon rolls, it’s pretty much the same technique, except you press the rolls into a loaf pan to make that fancy braided swirl pattern.

For The Bread

  • ¾ cup water 175 ml
  • 2 tablespoons organic cane sugar 24 grams
  • teaspoons active dry yeast 4.5 grams
  • cups all-purpose flour 300 grams
  • 1 teaspoon kosher salt
  • 3 tablespoons olive oil, plus more as needed 45 ml
  • Vegan butter for pan

For The Pesto

  • ½ cup tightly packed fresh basil leaves
  • 1 cup raw walnuts
  • 1 teaspoon minced garlic about 2 small cloves
  • ½ cup olive oil
  • 2 tablespoons nutritional yeast
  • 1 teaspoon salt

Optional, For Serving

  • Marinara sauce for serving

Instructions

To Prep The Dough

  • Heat the water in a microwave-safe bowl in a microwave or in a small saucepan over the stove until it’s lukewarm but not yet hot (110 to 115°F[43 to 46°C]). Stir in the sugar and yeast. Let the mixture stand for 5 minutes, or until the yeast foams. (See notes below).
  • In a large bowl, whisk together the flour and salt. Pour in the olive oil and the yeast mixture and mix with a wooden spoon until a shaggy dough forms. Turn out the dough onto a clean work surface and knead for 5 to 6 minutes, or until soft and springy. If the dough feels too dry, wet your hands with a little warm water and continue kneading. If it’s sticking to your fingers, add a dusting of flour, but err on the side of a stickier dough.
  • Place the dough in a well-oiled bowl and turn the dough over a couple of times so it’s coated. Cover the bowl with a clean, damp towel and place it in a warm spot to rise for 1½ hours, or until the dough has doubled in size.

To Make The Pesto (see note below)

To Prep The Bread

  • Grease an 8 x 4–inch(20 x 10–cm) loaf pan with vegan butter and line with parchment paper, leaving a slight overhang on two opposite sides, for easy removal.
  • Once the dough has risen, punch it down.
  • Roll the dough out into a 12 x 18–inch (30 x 45–cm) rectangle.
  • Spread the pesto over the surface of the dough, then roll it up lengthwise into a tight log.
  • Cut the dough into nine or ten equal-sized pieces, using a sharp knife or a clean length of dental floss.
  • Press each roll into the loaf pan, alternating sides to create a zigzag pattern. Cover the pan with plastic wrap and place in a warm spot to rise for another 45 minutes.
  • When ready to bake, preheat the oven to 350°F (180°C). Uncover the bread and brush the top with olive oil.
  • Bake for 30 to 35 minutes, or until the top turns a deep golden brown. Halfway through the bake time, cover with aluminum foil to prevent the top from getting too dark.
  • Use a toothpick to test that the center is no longer doughy. Remove from the oven and let cool in the pan for at least 15 minutes before transferring to a wire rack to cool completely.

Notes

To make sure your active dry yeast is indeed active, it’s important to “bloom” it before adding the rest of the ingredients. The key is to make sure the water is warm but not hot enough to kill the yeast. If you’re new to bread baking, I recommend using a thermometer just to be safe. This is usually not the case, but if your yeast doesn’t begin to foam within the first 5  to 10 minutes, it means it’s dead and you’ll have to use a new package.
A note about the pesto: The World of Vegan walnut pesto recipe may make a little extra. Any leftovers can be used in pasta or as a sandwich spread.

  • Cocoa powder: This superfood is extremely healthy and is one of the top antioxidant-rich foods on the planet! It provides iron, and it’s a rich source of magnesium too.
  • Flaxseeds: Grind flaxseeds and water to make a vegan egg substitute. It works amazingly well in this recipe and lots of other baking recipes.
  • Brown sugar: This adds a hint of molasses flavor. If you like, you can substitute coconut sugar which is lower on the glycemic index.
  • Vegan butter: This add moisture and a rich, buttery taste. If you don’t want to use vegan butter, substitute melted refined coconut oil instead.
  • Unsweetened, non-dairy milk: You can choose any type of plant-based milk here: soy, oat, almond, or cashew. Just make sure sure it’s unsweetened and plain so you don’t introduce any other unwanted or clashing flavor into the bread.
  • Vanilla Extract: This fragrant, dark liquid is made by steeping vanilla beans in an alcohol solution to extract its flavor. It has a sweet and floral fragrance with a caramel-like taste.

Ingredient Swaps

Raw Cacao Powder: In this recipe, we use cocoa powder which is your standard cocoa used for baking. However, if you want to maximize the nutritional potential of this recipe, you can use raw cacao powder which is minimally processed and retains the highest amount of nutrients in comparison to baking cocoa. But you can certainly use either and they will be both yields the same delicious result! 

Coconut Oil: This recipe is very easy and can be tweaked to your liking. Feel free to use refined coconut oil if you prefer instead of vegan butter. Just ensure that either option is melted so that it combines easily with the batter.

Coconut Sugar: You are also welcome to substitute coconut sugar for brown sugar. It will create the same final result but it is a bit of a healthier option and amazing for those who need to watch their blood sugar levels. Coconut sugar is lower on the glycemic index than regular brown sugar, and it has a nice variety of minerals.

How To Make This Healthy Chocolate Zucchini Bread

This sweet bread is very easy to make. Grab a box grater and have fun with this recipe!

Make Your Batter

Step One: Combine the sifted flour, cocoa powder, baking soda, and salt together in a large bowl.

Step Two: To make your vegan “egg”, whisk together the ground flax and water to a small bowl. Set it aside to thicken.

Step Three: In another separate medium bowl, combine the sugar, butter, milk, and vanilla. Add the flax mixture and stir to combine. Combine the wet and the dry ingredients together.

Step Four: Fold the chocolate chips and the zucchini into your batter.

Bake Your Bread

Step Five: Transfer the batter to a loaf pan. Bake for 50 minutes. It’s done when a toothpick inserted into the center of the loaf comes out clean.

Once baked, allow the loaf to cool. Remove it from the pan. Slice, serve, and enjoy!

FAQs

Do you peel zucchini before grating it for zucchini bread?

There is no need to peel the zucchini in this recipe. The skin contains lots of healthy vitamins and minerals! Zucchini skin is thin and it will soften during the baking process. We use a box grater and grate the zucchini on the side with the large holes. No need to press out any moisture, as this is what’s going to make this bread moist and delicious!

Can I use a different-sized pan for this recipe?

In this recipe, we use an 8.5″ x 4.5″ loaf pan. If you don’t have this size pan, don’t fret. You can use another pan that is very similar in size, or even split it up between 2 mini baking pans and just adjust for the cooking time. Another nice option for this recipe is to turn the batter into muffins instead of a loaf. Whatever variation you choose, check on the oven frequently. When you think it’s done, insert a toothpick into the middle. When it comes out clean, the bread is done!

Ingredients

  • cup all-purpose flour
  • cup cocoa powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 2 tablespoons flax meal + 6 tablespoons water
  • ¾ cup brown sugar or coconut sugar
  • ½ cup vegan butter or coconut oil, melted
  • ¼ cup non-dairy milk unsweetened
  • 1 teaspoon vanilla extract
  • 1⅓ cups grated zucchini
  • cup mini chocolate chips

Instructions

  • Preheat your oven to 350 degrees F. Line an 8.5″ x 4.5″ loaf pan.
  • In a large bowl, sift together the flour, cocoa powder, baking soda, and salt. Whisk together and set aside.
  • Add the ground flax and water to a small bowl and whisk together until combined. Set aside and allow the mixture to thicken.
  • In another separate medium bowl, mix together the sugar, butter, milk, and vanilla until well combined. Add the flax mixture and mix again.
  • Combine the wet and the dry ingredients. Fold in the chocolate chips and the zucchini.
  • Transfer the batter to the baking pan and bake for 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  • Cool the loaf before removing it from the pan. Slice, serve, and enjoy!

What’s The Difference Between Roti vs Chapati

Roti and chapati are two very similar flat breads with names that roughly translate the same way, simply as “bread.” Sometimes the names are even used interchangeably, adding to the confusion.

The key difference is that chapati tend to be richer, with more oil and salt, which also makes them denser and chewier while roti are a bit lighter and crisper.

What About Paratha Or Naan?

Paratha are also closely related to these two but are made with a generous amount of butter that makes rich, flaky layers throughout. They’re more labor-intensive and time-consuming as a result.

Naan are quite different, being thick and fluffy due to the inclusion of yeast and often yogurt. They’re often cooked with a generous amount of butter and garlic, making them quite decadent. Naan can also be stuffed with things like spiced potatoes, sautéed onions, dried fruits, and more.

  • Whole wheat flour: Standard whole wheat flour is made from ground hard red wheat berries, which can be somewhat coarse and earthy. For a softer, more mild dough, try white whole wheat flour instead. It has all the same nutritional benefits but is more agreeable with kids and picky eaters. If shopping in Indian specialty stores, look for “atta flour” or an “atta/durum” blend.
  • Water: No need to go crazy here, standard tap water is just fine! Keep it at room temperature to blend easily and don’t be afraid to add a bit more if needed. If the dough seems to dry or crumbly, trust your intuition. It gets easier to determine the ideal consistency with practice.

The simplest recipes can sometimes be the most difficult to master, but that’s not the case once you know a how to make vegan roti with ease. Here are some expert tips to master making roti on your first try.

1. Getting the dough to the right texture is the most important factor. It should be soft and pliable, smooth and slightly tacky, but not wet or sticky. If it’s too loose, add more flour. If it’s too dry, drizzle in more water just a few teaspoons at a time.

2. Let the dough rest for 5 to 10 minutes to let the gluten relax. This will make it easier to roll flat. Keep it covered during this time to prevent it from drying out or cracking.

This delicious 2-ingredient roti is an easy flatbread eaten often in the Terai region of Nepal. It's the perfect side to serve with your favorite curry and can be ready in less than 30 minutes!

Ingredients

  • 2 cups whole wheat flour + 24 tablespoons
  • ¾ cups water

Instructions

  • Add 2 cups of flour to a large spacious bowl. Save 24 tablespoons of flour for dusting later.
  • Slowly add water and knead thoroughly with your knuckles for at least 10 minutes. Then cover the bowl with a plate for 5–10 minutes.
  • Knead the dough several times again (at least another minute).
  • Lightly dust a smooth, clean surface with a little flour. Take a small ball of dough (about the size of a golf ball) and flatten with the palm of your hands. Use a rolling pin to flatten further, to 6–8 inches diameter. Dust the dough as you roll to keep it from sticking to the rolling pin.
  • Heat a pan on medium. Add the roti once the pan is hot. It will slowly turn brown, and then flip to the other side.
  • Gently press down on the edges of the roti with a spatula until it puffs. If this is your first time, it might not puff.
  • Fluffy and soft roti is ready once it’s golden brown on both sides. Repeat the process with the remaining dough.

Notes

Tips:
  • Make sure to evenly roll out the dough and get it pretty thin; less than 1/8th inch thick.
  • When making the dough, do not pour all the water in at once. Instead, add it slowly, a little at a time. It might take a few tries to make fluffy roti, but don’t get discouraged. You’ll get better with practice.
  • If this is your first try, tap lightly on the edges of the roti. If you press too hard, the puff may break.
Serving suggestion – Roti is amazing when paired with any curry or used as a wrap. Top it with a vegan herbed butter for additional flavor.

Ingredients

  • cups strong white bread flour
  • 2 ¼-ounce sachets fast-action dry yeast
  • ½ teaspoon superfine sugar
  • ½ teaspoon baking soda
  • cups warm water
  • 6 tablespoons vegetable or sunflower oil for frying
  • 1 any crumpet topping of your choice

Instructions

To Cook The Crumpets:

  • Put the skillet over medium-low heat and brush it with oil.
  • Pour the oil for frying into a shallow bowl.
  • Dip your molds into the bowl and brush around them with oil, then place them in the pan.
  • Add enough batter to each mold to come about halfway up the sides (about ½ inch deep if using a can), being careful not to overfill them as the crumpets will rise a lot. Cook for 5 minutes, until the bubbles that appear on the top have burst. If you’re using a can, carefully release the crumpet by running a knife around the inside edge of the can, being careful not to burn your hands as the metal will be hot.
  • Flip over the crumpets to cook the other sides for another minute.
  • Transfer the cooked crumpets to a board, sliding them out of the molds, if using.
  • Repeat as necessary until you have made 8 crumpets.

Notes

Store any leftover crumpets in a sealed container and toast before eating.

  • Croutons: Jazz up your next leafy salad with crisp, flavorful croutons. Cube the bread and toss with olive oil. Bake at 375 degrees for 15 – 20 minutes, stirring occasionally, until golden brown. Let cool and enjoy right away or keep in an airtight container for up to a week.
  • Seasoned breadcrumbs: Waste not, want not! If your loaf is starting to get stale, toss the ends into your food process and grind coarsely. Let it dry out further and store in an airtight container and save them for your next recipe.

Key Ingredients:

  • Spelt flour: Spelt flour is made from the entire grain; bran, endosperm, and germ. This gives it a nutty depth of flavor and makes it a bit heavier than refined or bleached flours. You wouldn’t want to bake a delicate cake with it, but it’s fantastic for a hearty loaf of bread.
  • Active dry yeast: This is the most common type of yeast sold in grocery stores, available in bulk bags or individual packets containing 2 ¼ teaspoons each. It needs to be mixed with warm water to re-activate and thrives with just a little bit of added sugar. Sugar is the food yeast eats, creating carbon dioxide which are the bubbles that leaven the bread.
  • Coconut sugar: Made from the sap of the coconut palm tree, not the fruit itself, this natural sweetener is less processed than conventional sugar cane, which gives it a richer molasses-like flavor. It has a lower glycemic index and retains trace vitamins and minerals.
  • Herbs: Fresh thyme, basil, and rosemary give this load a distinctive fragrance, like a garden in full bloom. If using dried herbs, reduce the volume by ⅓; for every tablespoon of fresh herbs, use only 1 teaspoon dried.
  • Seeds: Poppy seeds and sesame seeds freckle this dough, adding a subtle toasted flavor and toothsome texture. You could incorporate different small seeds, like hemp, flax, or chia if you’d prefer.
  • Water: Temperature is critical here! Yeast is happiest in room temperature or slightly warm water. Yeast dies at 140°F and cannot re-activate below 35°F. Cold temperatures won’t kill it but will slow it down. Therefore, you can store fully prepped and risen yeasted doughs overnight to bake in the morning.

What Is Spelt Flour?

For over 5,000 years, spelt berries have been enjoyed cooked whole, much like barley. Archeological evidence traces spelt back to Transcaucasia, the region bordering Eastern Europe and Western Asia, though it is best documented throughout history in Central Europe. It became the principal wheat species and Germany and Switzerland by the end of the Iron Era, in 15 BCE.

Because spelt is a form of wheat, it does contain gluten and is not suitable for those with celiac disease. It is, however, more easily digested and thought to be better tolerated by those with mild sensitivities. When in doubt, ask your doctor before digging in.

Tips for Baking Your Best Bread Ever

  1. Read the recipe all the way through before getting started. Most bread recipes take more time from start to finish, but most of that is inactive, while the dough rises. Make sure you plan accordingly if you want to get it on the table for a particular meal.
  2. Gather and measure your ingredients so they’re ready to go. It can be a pain to dig through the pantry when you’re already elbows-deep in flour.
  3. Treat your dough gently. There’s no need for aggressive kneading here! While it’s rising, keep it covered in a warm, draft-free place so that it’s not disturbed. Think of it like a sleeping baby if that helps.
  4. Don’t walk away from the oven. Some run hot, some run cold, so you should keep an eye on its progress as the loaf bakes. You may need to pull it earlier if it’s browning to fast or rotate it if it’s baking unevenly.
  5. Let it cool for at least an hour before slicing. I know, it’s tempting to cut off a wedge immediately, but try to resist! It will still be slightly gummy when it’s still hot, and will also dry out much faster.

How to Store and Re-Heat Your Bread

Never run out of vegan bread when you bake in advance. Even if you don’t go through very much at a time, there’s no reason why you can’t enjoy a fresh slice on demand whenever cravings strike.

After the spelt bread has completely cooled, cut it into slices. Wrap the whole loaf tightly in plastic wrap, and then again in aluminum foil. Label with masking tape and a sharpie (don’t forget to add the date) and freeze for up to six months. When you want to re-heat, just pop a slice or two straight into the toaster.

Ingredients

  • cups spelt flour, divided 560 grams
  • teaspoon active dry yeast 8 grams
  • teaspoon table or Himalayan pink salt 8 grams
  • 1 tablespoon dried or finely chopped fresh thyme 3 grams
  • 1 tablespoon dried or finely chopped fresh basil 3 grams
  • 1 tablespoon dried or finely chopped fresh rosemary 3 grams
  • 1 tablespoon poppy seeds, divided 8 grams
  • 2 tablespoons sesame seeds, divided 18 grams
  • 2 tablespoons coconut sugar 20 grams
  • cups room temperature filtered water 420 ml
  • 1 teaspoon of flaky sea salt
  • 1 teaspoon of granulated garlic

Instructions

  • In a large bowl, combine 3 cups (480 g) of the spelt flour, yeast, Himalayan pink salt, thyme, basil,rosemary, ½ tablespoon (4 g) of the poppy seeds, 1 tablespoon (9 g) of the sesame seeds and the sugar.
  • Mix the ingredients with a fork until everything is well combined. Slowly add the water and mix the dough with a fork until the water has been absorbed. Don’t overmix this dough or attempt to form it into a ball. It will be wet and messy, and that’s exactly what you want. Cover the bowl loosely with a lid;make sure it’s not completely airtight. Let the dough sit on the counter to ferment and rise for at least 6 hours and no more than 24 hours. The dough will double in size. The more you let it ferment, the stronger sourdough taste you’ll get.
  • Preheat your oven to 450°F (232°C). Line a 5 x 9–inch (13 x 23–cm) loaf pan with parchment paper. In a small bowl, mix together the remaining ½ tablespoon (4 g) of poppy seeds, 1 tablespoon (9 g) of sesame seeds, flaky sea salt and granulated garlic. Set this mixture aside.
  • Grab your bowl with the dough and remove the lid. Sprinkle 2 to 3 tablespoons (20 to 30 g) of the remaining flour over the top of the dough. Start to release it from the sides of the bowl with your hands, but keep it in the bowl. Knead the dough in the bowl five or six times, dusting it with a bit of the remaining flour as needed. The dough will still be a little flimsy and tacky to the touch.
  • Release the dough into the lined loaf pan and cover the top of the dough with your seed mixture. Make a few shallow diagonal slices on the top. Let the dough rest for 10 minutes, and then bake it for 35 minutes. It will puff up and be nice and golden brown on top when it’s done. Remove the bread from the oven and use the parchment paper to immediately remove it from the loaf pan. Let the bread cool on a rack for about 30 minutes before serving it. Yum!
  • Keep the bread in an airtight bag on the counter for 4 days, and then move it to the fridge. If you want to make this bread in big batches to freeze, slice it first and put it into an airtight container before freezing it.

Notes

To make this into a round loaf, place a 5-quart (5-L) Dutch oven in your oven when you preheat it. Line the Dutch oven with parchment paper and place the dough inside. Top the dough with the seed mixture, make a few slices on the top, cover and bake the bread for 30 minutes. Uncover the Dutch oven and bake the bread for 15 more minutes. Remove the bread to a rack to cool.

Pitas are particularly useful when you’re eating on the run or just can’t be bothered to use a plate. They’re super handy, incredibly tasty, and even more heavenly homemade. If you’ve never tried making pita bread from scratch, this is totally the time to try it. What Is the Difference Between Naan and Pita Bread?

That’s a great question! Although both are flatbreads made from a basis of flour, active dry yeast, water, and salt, there are a few differences:

  1. Naan traditionally includes dairy yogurt or egg in the bread dough. These added ingredients give the dough a thicker texture when cooked. (You could always use a vegan yogurt or plant-based egg substitute to make your own naan.)
  2. Naan is baked in the oven, while pita bread is usually made in a skillet on the stove top.
  3. Pita pockets have less calories on the whole and call for less oil than naan bread.

Is Pita Bread Vegan?

Since the base for pita bread is flour and water, pita bread is totally safe for vegans! Some recipes call for ingredients such as olive oil or salt for flavor but unlike naan, dairy is not a central ingredient in pita bread. If you’re dining at a non-vegan establishment and order something with pita bread, chances are quite high that it’s suitable for vegans. If it puts your mind at ease, feel free to double-check that the bread isn’t brushed with eggs or dairy.

How to Serve Up Your Vegan Pita Bread

Since pita breads are so very versatile, it’s really fun to come up with festive ways to formulate and fill these puffy pockets. These are only a few of our own ideas––we’d love to hear about your favorite ways to enjoy this stovetop-baked bread!

  • Salad Storage – The absolute best solution to salads-on-the-go! Mix up a batch of chickpea tuna salad, potato salad, vegan chicken salad, three bean salad, tabbouleh salad, or even a vegan Greek salad with tofu feta. Throw in a few romaine leaves for added crunch and off you go!
  • Simple Sandwich – This one is super easy. Think about whatever you love in a sandwich and just throw it into a pita pocket. How about nut butter and jelly, vegan deli meat and cheese, or a simple hummus with thinly sliced veggies? Quick and really delicious.
  • Pita Chip Partay – A favorite snack! When your pita breads are on the brink, baking homemade pita chips is the perfect plan. Cut into triangle pieces (like you would cut a pizza) and lay out on a parchment covered baking sheet. Give them a spritz of spray oil, a few shakes of garlic powder (or cinnamon sugar), and bake at 350 degrees in a preheated oven for 8-10 minutes. Deeelish!
  • Sweet & Savory Saves the Day – If you’re thinking that basic pita bread sounds a bit boring, you can jazz it up in more than one way. For a sweeter bread, consider adding finely chopped dried fruit (like currants or raisins), orange zest, or a dash of cinnamon. When savory is more your style, mix in garlic, onions, smoked paprika, or maybe even a little nutritional yeast. Yum!

Craving Some Crunch?

When your food is super soft and squishy, your mouth wants to rebel and demands another texture. Give your delicious pita bread dough a bit of extra bite by adding chopped sunflower, pumpkin, or sesame seeds to the mixture before cooking. Easy Vegan Pita Bread Recipe Made on the Stovetop

Simple Storage

Because they are homemade and have no preservatives, this homemade vegan pita bread recipe won’t last as long as commercially made pockets. If you store your leftover pitas in a bread box on the countertop, they will last for 2 days. Please do not refrigerate or they will dry out and be as pleasant to eat.

If you don’t think you’ll be able to eat your remaining pitas in that time frame, wrap each one individually securely in plastic wrap (or using a vegan wax wrap) and place in a sealed freezer-safe container. You can freeze them for up to one month.

Vegan Pita Bread

Once you make this homemade vegan pita bread, you won't want to go back to store bought. Pita is a yeast-leavened, round flatbread with a puffy pocket, commonly eaten in the Middle East and neighboring countries. It's made with flour, olive oil, yeast, salt, and a touch of sugar to aid in fermenting. It's so warm and delicious!

Ingredients

  • cups all-purpose flour, plus extra for kneading (300 grams)
  • cups lukewarm water, divided (360 ml)
  • teaspoons active dry yeast
  • 1 teaspoon light brown sugar
  • 1 cup whole wheat flour (125 grams)
  • ½ teaspoon salt
  • 1 teaspoon canola or olive oil

Instructions

  • Combine 1 cup of all-purpose flour and 1 cup of lukewarm water with all of the yeast and sugar into a mixing bowl. Mix with a fork.
  • Cover with a kitchen towel and allow to ferment for 30 minutes until thick and frothy.
  • Add 1 cup of all purpose flour and 1 cup of whole wheat flour , ½ cup of lukewarm water, and salt. Fork mix until a sticky dough comes together.
  • Transfer to a clean, floured surface and knead for around 10 minutes, gradually adding ½ cup of flour and a teaspoon of olive oil. The dough will become smooth and springy to the touch.
  • Shape dough into a ball and place into a mixing bowl. Cover with a kitchen towel and allow to rise for 1 hour or until it doubles in size.
  • Tip the risen dough onto a floured surface and knead for 1 minute. Use a sharp knife to cut into 8-10 equal pieces and form each into a ball with your hands.
  • Cover and allow to rise for another 30 minutes.
  • Roll each ball into a flat circle, cover and allow to rise for another 30 minutes.
  • Lightly oil the skillet and heat over medium heat for 2 minutes.
  • One at a time, cook pitas in the hot skillet for 1-2 minutes each side until they puff.

Notes

Added variations to the end of Step 4:

  • Crunch - add chopped pumpkin or sunflower seeds to add flavor, texture, and nutrition
  • Sweetness - add chopped raisins or currants, orange zest, or ½ teaspoon of cinnamon
  • Savory - add chopped, baked garlic, and ½ teaspoon of turmeric for a savory, golden pita

I’ve loved focaccia bread ever since I was a little girl. My mom used to take me to a local bakery that had shelves stocked full of all different varieties of fresh-baked bread. I’d always head straight for the pillowy rosemary-infused focaccia sprinkled with chunky sea salt. 

Fast-forward a few decades to today, and now I make my own focaccia bread from scratch at home! It’s a surprisingly easy endeavor. Focaccia can be made with just six base ingredients (plus any fun add-ins you desire). It takes a while as you have to let your dough rise (or “prove”) for a few hours, but the method is simple. And my-oh-my will it be worth the wait when you smell the aroma of freshly baked focaccia wafting through your home!

In this recipe, I’m going to share my favorite way to make focaccia. I love making focaccia with olives and fresh rosemary (my personal favorite combo!) but you can absolutely mix it up however you’d like by adding tomatoes, caramelized onions, garlic, red pepper flakes, or any number of other ingredients. I’m including more ideas for you below. 

Delicious Vegan Focaccia Toppings

If you love focaccia as much as I do, you’ll have lots of fun playing around with different varieties! You can even split the dough in two (or three or four) and make several different varieties in a single baking sesh. 

Here are some of my favorite focaccia toppings:

  • Olives
  • Rosemary
  • Cherry Tomatoes
  • Garlic
  • Mushrooms
  • Green Onions
  • Raw Onions (thinly sliced)
  • Caramelized Onions
  • Greens (spinach focaccia and basil focaccia are both really delicious)
  • Peppers (I’m all for a spicy jalapeno focaccia!)
  • Vegan Cheese (how about some vegan feta focaccia?)
  • Black Pepper (like the popular Panera black pepper focaccia)

See How This Vegan Focaccia Bread is Made!

Use High-Quality Olive Oil

Focaccia gets much of its delicious flavor from olive oil, so it’s important to use a really high-quality extra virgin olive oil in this recipe.

Extra virgin olive oil is made from pure cold-pressed olives. Other types of olive oil are lower-grade, refined, and can even be a blend of other processed oils. If you did an olive oil taste test you’d notice that olive oils that aren’t labeled “extra-virgin” are often lacking or completely void of flavor. 

I used this organic Sicilian extra virgin olive oil from Bono. Bono is a longstanding company that has been around since 1934 and runs the biggest oil mill in all of Sicily. Their olive oil is aromatic and rich in both color and flavor. If you’ve never had a high-quality Italian olive oil before, I highly recommend giving this a try!

Shaping Your Focaccia Bread

This recipe makes a dough that can be shaped in a number of different ways.

Want one big uniform rectangular focaccia loaf? You can spread the dough into a large baking dish. I used one like this 7″ x 11″ Pyrex dish) which creates a thick focaccia (pictured above). 

Alternately, you can shape the dough however you’d like on a large baking pan. You can make one giant loaf or split the dough into two, three, or four separate parts. Shape it to be round, oval, or oblong to look extra-rustic—the choice is yours!

I whipped up another batch of vegan focaccia today. I separated the dough into two parts and spread them into oblong ovals on an oiled baking pan. They came out looking rustic and beautiful (this is the bread featured in the cover photo of this article)! 

Vegan Bread-making, Here We Come!

Breadmaking is one of my favorite types of baking. If you give it a chance, I imagine it will quickly become one of yours too. The steps are simple, and it’s really fun seeing what some flour, yeast, and water can do when you help them work their magic.

Making bread can be a test of patience, for sure, and takes some forethought and planning. But as soon as you fill your home with the smell of baked bread, you’ll be hooked.

Might I recommend whipping up a batch the next time you want to make some happy memories with friends? After all, scent is the strongest sense tied to memory!

  • In a large mixing bowl, add the flour, salt, and wet yeast mixture, and mix together until a dough forms.
  • Flip the dough out onto a lightly floured surface (such as a clean countertop), and knead for 5 – 10 minutes.
  • Clean out the mixing bowl and coat the bowl lightly with oil. Place the ball of dough into the bowl, flipping to coat with oil. Cover the bowl with a damp cloth and allow to rise in a warm area (such as near the stove) for 1.5 hours, or until the dough doubles in size.
  • Place the risen dough back onto your lightly floured surface once more and very gently tumble it around to “knock the air out” before shaping the dough and placing it onto an oiled baking pan or baking dish.
  • You have a few options for shaping your dough. You can spread the entire mass into a 7″ x 11″ baking dish (this will produce a thicker and very uniform rectangular focaccia). For a more rustic hand-formed focaccia, you can spread the dough onto a large baking sheet in one big mass or break it into two, three, or four mini-loaves.
  • Once shaped on your oiled baking dish or pan, lightly coat the dough with oil, cover with a damp cloth or oiled plastic wrap, and leave to rise for another 30 minutes.
  • Preheat oven to 425 degrees.
  • Remove the cloth or plastic wrap from the dough and add your toppings. Press the olives, fresh rosemary sprigs, and anything else you’d like to add deep into the dough. Using your finger, stab the rest of the dough to create the classic focaccia indents that will catch the oil. Push your fingers from the top of the dough straight down all the way through to the bottom. Continue across the entire surface until the full loaf is covered with finger indents spaced about an inch (or less) apart.
  • In a jar or container with a lid, add the ⅓ cup of olive oil and ⅓ cup of water and shake vigorously until combined. Pour this mixture on top of your dough (it will hang out in the finger indents you just made).
  • Bake for 20 minutes until very lightly browned on top. Remove, sprinkle with chunky salt, and enjoy!

Rosemary Beer Bread

Yes, we are making quick bread with beer and it’s so good! In this rosemary beer bread, there is no yeast involved and once the onion is sautéed, it takes mere minutes to mix up and pop into the oven. The flavor is amazing and the crumb is incredibly soft
and fluffy, thanks to the bubbly, foaming beer. Eating this rosemary beer bread warm from the oven, dripping with vegan butter, is a comfort food experience not to be missed.

Ingredients

  • 2 teaspoons olive oil or water
  • 1 medium onion sliced into thin half-moons
  • 2 tablespoons sugar cane or granulated white sugar divided
  • 2 tablespoons vegan butter melted (optional)
  • 3 cups all-purpose flour 375 grams
  • 3 cloves garlic finely chopped
  • teaspoons fresh rosemary finely chopped (about two 2″ sprigs)
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • ¼ teaspoon black pepper freshly ground
  • 12 ounces beer or ale

Instructions

  • In a small skillet, heat the olive oil or water (for oil-free cooking) over medium heat. Add the onion and 1 tablespoon of the sugar. Cook, stirring frequently, for about 15 minutes, or until really golden and caramelized. If using water to sauté, add a little more throughout the cooking process to prevent sticking. Remove from the heat and allow to cool. 
  • Meanwhile, preheat the oven to 375°F (190°C) and grease a 9 x 5–inch (23 x 12.5–cm) loaf pan with a little of the melted vegan butter or oil spray. If your loaf pan doesn’t release easily, line it with a strip of baking parchment lengthwise down the middle, with enough to go up and over the ends to act as handles.
  • In a bowl, combine the remaining tablespoon of sugar, the flour, garlic, rosemary, salt, baking powder, and pepper, and mix well. Add the cooled onion and beer. The batter will bubble up and fizz. Stir gently, just enough so that everything is combined. Do not overmix.
  • Spoon into the prepared pan, drizzle with the optional remaining melted butter, and place in the oven. Bake for 40 to 45 minutes or until a toothpick or knife inserted into the middle of the loaf comes out clean. Remove from the pan and let cool on a cooling rack. 
  • Great eaten while still warm or when cold.

Notes

Tips: Try scattering some vegan cheese over the top before baking! Uncut loaves can be wrapped well and frozen for up to 2 months.
Serve it as it is, pack it in lunch boxes, use as an appetizer with a vegan cheese board or as a side with soups and stews. I advise you to double the recipe and make two because the first will be gone in minutes!
